The Trade

Beth Conrey

At Bee Squared, Beth produces honey from bees that have not been chemically treated. Locally produced honey is better for you and for your environment. Sourced from three Northern Colorado counties - Boulder, Larimer and Weld - a variety of sizes and types ensures that there is a honey for every occasion. Dedicated to sustainable beekeeping, the company helps give back to their community by inviting food lovers to join them and learn safe practices on harvest tours and honey-making workshops.

What Inspired You To Start Your Company?

I love my bees and I love our honey!

Tell us about your products.

Bee Squared makes several products.  We have our Good Food Award winning “Rose Infused Honey from the Heart” (featured in The Box from Chef Alex Seidel) which is a collaborative effort with Happy Heart Farms CSA in Fort Collins. Simple and stunning.

We produce varietal honey.

We make beautiful hand-rolled beeswax candles decorated with dried flowers and luscious all-natural soaps.

What is your favorite small-batch treat?

Nosh This Lavender Crack—another Good Food Award winner 2016

What Drew You To Food?

I have always been a foodie.  I used to work for 2 of the major distributors and love food and food people.

Where Does Your Food Inspiration Come From?

Probably from my parents as my entire family loves to cook and eat well.

What Products Are You Working On Now?

We are working on some other honey infusions.

Do You Have a Favorite Product?

Honey, of course.  I have probably 40 different varietals in my kitchen now.  Always fun to see the difference in output from the different varietals.

Latest Ingredient Obsession?

Working through Yotam Ottolenghi‘s Jerusalem.  Lots of interesting ingredients in there!

What Did You Have For Dinner Last Night?

Pheasant with ginger cream sauce on long grain and wild rice.  Cleaning out the freezer…

What Other Local Food Artisans or Chefs Do You Admire?

I admire the dedicated farmers who are trying to produce food without poison.  Their labors produce delicious food—food that is good, and good for you.

If You Had To Choose Your Last Meal, What Would It Be?

That’s an impossible question!  I love food!
