Produced by nature and cultivated by world cultures through thousands of years, heirloom beans are untouched by genetic sciences or modern technology. These beans were first bred in Colombia before finding their way up to North America and across the globe. Used in Italian, Spanish and Portuguese cuisine, Cranberry beans are plump and pale pink with maroon markings. 

A hearty addition to soup, salads, pasta dishes and casseroles, these Hierloom Cranberry Beans are fast becoming one of our favorite pantry staples given their versatility. Try sweating them with Bacon, Red Onions, and Radicchio for a perfect winter ragout; in an Alice Waters-inspired Gratin with Herbs and Mirepoix; or even incorporated into a Mole Sauce with Roasted Winter Squash.

 

Get To Know Zürsun

In Idaho, Zurson founder Lola Weyman found several farmers growing unkown lentil varieties. During the late 1980's she began distributing American-grown lentils, with orders coming from top chefs in America, Canada and Europe. Lola also helped develop new heirloom lentil and later, bean, varieties in the region. Today, owner Jim Soran continues that legacy: a commitment to discover, produce and distribute the worlds finest heirloom beans and unusual lentils.
