Recipe Feature | Prosciutto + Taleggio Sandwich

September's Featured Chef Jeff Mahin concocts a sweet, savory + pungent sandwich featuring prosciutto, figs, taleggio cheese + a creation all of Chef Mahin's own - Bur-Mayo [a combination of White Truffle Mayonnaise from Empire Mayo + Burrata Cheese].  Cook along side Chef Mahin in the video above + follow along with the recipe below.

Ingredients

Truffled Bur-Mayo

1 4oz ball of fresh burrata

4 tbsp. Empire Mayonnaise White Truffle Mayo

Sandwich

8 inch long baguette

8 slices (thin sliced) of prosciutto

2 oz tellegio cheese, thinly sliced

2-3 black mission figs, thinly sliced

3 tbsp. truffled bur-mayo (recipe below)

1 tbsp. olive oil

1 tbsp. honey (acacia)

Directions

Truffled Bur-Mayo

Combine in food processor and pulse until creamy.Sandwich

Cut the baguette in half length-wise

Place baguette into toaster crumb side up and toast until light brown

Remove and place onto cutting board

Spoon truffled bur-mayo onto the bottom half of the bread

In order, layer prosciutto, sliced figs and cheese

Drizzle with the honey and olive oil

Place the top part of the bread over and serve
