Goat Cheese + Tomato Soup

Ingredients
For The Soup:
16 Ounces, Jar Goods Classic Red
4 Ounces, Fresh Goat Cheese
Water
For The Olive Oil Toasts:
2-4 Slices Of Ciabatta, Sliced 1/2 Inch Thick
Olive Oil, As Needed
Directions
For The Soup:
1. Bring the Jar Goods Classic Red to a simmer.
2. In a blender or with a whisk blend in the goat cheese, slowly incorporating.
3. Check for seasoning with salt and pepper.
4. Adjust consistency with water as needed.
For The Olive Oil Toasts:
1. In a pan large enough to fit the bread (working in batches is fine) heat two tablespoons of olive oil over medium-high heat until just simmering.
2. Add the bread and toast until golden brown on one side. Flip and repreat on the other side. Remove to a warm plate.
